#veganvoice: Meet Asparagusaurus!

I am a 17 year old boy from Newcastle, England who went vegan after watching a Gary Yourofsky speech in October 2014. I was shocked to discover that what we, as a society, thought of as normal and even healthy way of living, was in fact a cruel, illogical, damaging way of existence that could not go on for much longer. As soon as I had been educated, I went from a protein-rich, meat-eating lifestyle, to fully vegan (no honey!) within a matter of days. From what I have learned through my experience, I believe that every human can, and most certainly should, switch to a fully vegan lifestyle.

I have set up my website Asparagusaurus to provide a database of my recipes, to be accessed by vegans and meat-eaters alike, in the hope that in some small way, it will help the cause.

Kebabs

Ingredients

  • 1 courgette
  • 250g cooked chickpeas/drained tin of chickpeas
  • 1 1/2 tablespoons of plain flour
  • 1 teaspoon of garlic powder
  • 1 teaspoon of cumin
  • 1 tablespoon of olive oil
  • Handful of mint leaves

​Method

  1. Grate the courgette and squeeze all the water out of the grated courgette, add to a food processor along with all of the other ingredients.
  2. Using the food processor, blend until all of the ingredients are well combined and the mixture is mould-able.
  3. You may need to add more flour or oil depending on the consistency.
  4. Form the mixture into small sausage-shaped kebabs using wet hands and put the kebabs in the fridge until ready to use.
  5. When ready, heat a thin layer of oil in a large frying pan, and add the kebabs (you may need to cook in batches).
  6. Cook until very brown on all sides, then remove the kebabs from the pan, placing them on kitchen roll to remove the excess oil.
  7. Serve with pita breads and tzatziki.
